One of my favourite places to have claypot rice, cheap and good. The new market is much cleaner and spacious compared to the older one, the air circulation is also much better. From my experience, newly renovated hawker centers’ food standard will drop abit, but this is one place that has not changed. Just that the price has gone up abit, but at least we are eating in comfort. This is one of the hawker centers that have lots of delicacies situated in one place. If i have friends from overseas that is coming to singapore for holidays, i will definately bring them here. For now i am going to introduce claypot rice, in short everything mix in a claypot, add seasoning and into the fire it goes. Try it at home and you will know that it is not as easy haha.
They choose to still use charcoal to cool the earthen claypot, which give it the rice dish a nice flavour. The sides of the pot has remains of chared rice which is crispy. I know it is really unhealthy but ones in a while it should not be a problem. In my opinion, the main ingredient that makes the dish out of the world, is the salted fish that is added to the dish while cooking it. Warning!! if you did not mix the rice properly, you may treat the salted fish as chicken parts and you might get brain freeze from it. At this particular store, the also serve really good soups, but i only drink the xi yan chai soup before, which is quite good especially the pork rib which is right under all the veg. Really good place to have dinner, two thumbs up.
Since i have time now, i shall guide you on how to mix it( taught by my friends, and please don t flame me). First you will be served with a claypot (main actor) full of rice and a mixture of chicken, chinese sausage, very. Next a red plate ( most places i eat will give red onces i think) and bowl with black soya sause + oil. First you got to take out the mixture of c , s , v, and place them into the red plate given. Identify the salted fish chunks. and smash them into smaller bits like tuna fish and mix it well into the rice. Add the given sauce ( in moderation ) and the mixture into the claypot then you can mix it together. Last but not least Bon apetite.
